This recipe is especially designed for you people that want to consume tasty yummy Raisin bran muffins for breakfast, in your lunches or include in your nearest and dearests' diets. It is versatile as I've included variations for taste choice.
Do you ever get tired of reading labels and being disappointed in all the crappy ingredients? That's an excellent reason to turn on the stove and these will be ready along with 5 to 7 minutes effort! The best thing is they're full of extremely healthy stuff that your body enjoys. They're kinda sneaky Raisin bran muffins actually cause nobody would ever believe there's no sugar in them!
Note: I use organic ingredients because I'm lucky enough to have a store where the bulk prices are a downright good deal. There's other reasons too that I go for organic although not the time or the place.............
TASTY YUMMY Raisin bran muffins
INGREDIENTS:
Makes a dozen!
Set oven to 400 degrees.
Use 2 cups of the next ingredients: Minimum 1 cup of oat or whole wheat bran or perhaps a combination of each plus;
Wheat germ
Coconut To equivalent 2 cups
cups skim/low fat milk or 1 ½ cups water & 2 or 3 tablespoons of dried milk or dried buttermilk.
2 eggs
1/2 cup molasses
cup fluid shortening (canola - a good body fat!)
2 cups whole wheat flour
tsp ginger
2 tablespoons ground flaxseed (I grind it along with my coffee grinder -- 10 seconds, done)
1 tbs baking powder
1 mug raisins or dried cranberries or some of each
METHOD:
Combine bran(s)/coconut/wheat germ with milk or water/buttermilk powder; allow stand until most of the dampness is taken up. Add ova, molasses and oil and defeat well.
Stir together flour, flax seed, ginger and baking natural powder. Add raisins & or cranberries. Add to above mixture, stirring only until combined .
Fill greased muffin cans. Bake 20 minutes. Check with a toothpick. When it comes away without anything sticking to it and you see that the Raisin bran muffins tend to be separating from the edges and they are a nice color, they're done! If you're making these you've probably made a few Raisin bran muffins before, so you understand what you're doing.
